Darin Feinstein

Founder & CEO

Darin Feinstein, a non-practicing attorney, has vast experience in the Food & Beverage, Hospitality and Entertainment industries. Mr. Feinstein is the founder and creator of El Dorado Cantina, an organic and GMO-free Mexican concept that is currently in several locations on the West Coast. Mr. Feinstein is the largest franchisee in terms of total revenue for the Fatburger brand as is also the creator and owner of the Fatbar concept. Mr. Feinstein’s Fatburger location on Las Vegas Boulevard is the most successful restaurant in the chain and Mr. Feinstein owns other locations located within casinos.

Mr. Feinstein purchased the Viper Room from Johnny Depp in 2003 and recently sold the brand in 2019 after 16 successful years. Mr. Feinstein is a franchisee of Rock & Reillys, and operates the Rock & Reilly’s location on Las Vegas Boulevard. In addition, Mr. Feinstein is a franchisee of Sugar Factory with a location on South Beach in Miami as well as locations on Las Vegas Boulevard and other territories. On the entertainment front, Mr. Feinstein founded Red Mercury Entertainment, a full-service ticketing, box office and production company which services casinos in Las Vegas. 

Currently, Red Mercury Entertainment controls and runs entertainment at The Strat Hotel, Casino & Tower in Las Vegas with Golden Gaming, as well as has theater, box office and production at the Tropicana Hotel & Casino. Mr. Feinstein through Red Mercury is also a co-producer of many shows in Las Vegas with Caesars Entertainment, MGM and Live Nation which have included J-LO, Britney Spears, Lionel Riche, Gwen Stefani, Aerosmith, Lady Gaga and several others at MGM’s Park Theater, Planet Hollywood, and The Venetian. Mr. Feinstein is also an owner and producer of several tribute shows currently operating inside casinos in Las Vegas including MJ Live (which has been running 7 days per week since 2010) and Purple Reign, a Prince Tribute show located at the Tropicana. Mr. Feinstein has over 1,000 employees across various companies and has worked closely with casinos for over a dozen years.

Ryan Klaasen

Ryan Klaasen has worked in top-level positions for some of the nation’s most profitable restaurants and nightclubs throughout the past 20 years. He began his hospitality career as a manager at China Grill Management in 1999, which, at the time, owned the hottest restaurant and nightlife venues (rumjungle, Red Square, China Grill and Rock Lobster) in Las Vegas. He was recruited by TAO Group in 2007 as part of the management team and was promoted to General Manager of LAVO Nightclub in 2008. He continued to move up within the company, assuming the role as Director of VIP Services for TAO Group in 2009, ultimately becoming General Manager of Marquee Nightclub, the company’s largest project to date, with its opening in 2010. His success within Marquee led to his recruitment by Hyde Bellagio in 2011. Again, he rose through the ranks, quickly being promoted to Director of Operations for SBE where he developed several restaurant and nightclub concepts along with a large clientele base. He later went on to manage, and eventually co-own his own group of restaurants in Las Vegas and Los Angeles.

John Miranda

Chef John Miranda earned a degree in Culinary Arts and, immediately thereafter, was recruited to work for such upscale restaurants across the West Coast as The Resort at Pelican Hill and Raya by Richard Sandoval inside the Ritz-Carlton, Laguna Niguel. In 2014, Chef Miranda was invited to become a Master Cook at Joël Robuchon at the MGM Grand Las Vegas where he worked under the tutelage of three-star Michelin chef Claude Le Tohic. At Joël Robuchon, Chef Miranda learned the values of organization, precision, and attention to detail. No plate ever reached a customer that was less than a perfect piece of art. After Joël Robuchon, Chef Miranda joined Twist by Pierre Gagnaire at the Waldorf Astoria Las Vegas (formerly Mandarin Oriental Las Vegas), first as a Sous Chef and later becoming the restaurant’s first American Chef de Cuisine. During his time at Twist, Chef Miranda traveled extensively with Chef Gagnaire, working alongside the Chef’s Michelin-starred teams in restaurants throughout London and Paris. 

Karen Carlough

Karen Carlough has been in the hospitality industry for over 16 years, leading the sales and event teams at Vegas’ leading entertainment venues and groups including Light Group, Hakkasan Group, and Topgolf. As an industry leader in the events space, she oversaw the management of large-scale events such as the Michael Jordan Invitational After Party, the Derek Jeter Invitational After Party, the Tiger Wood vs Phil Mickelson Opening Reception, the iHeartRadio After Party, and the Jordan Spieth Under Armour Reveal Event. 

Kyle Vitzthum

Kyle Vitzthum has a bachelor’s degree in Marketing/Sales and a master’s degree in Business. This has led to 9 years in sales/customer service work through the retail, sports, cellular, and hospitality industry. The most recent endeavor was at Honeywell in the business aviation world. He took part in the business aftermarket helping operators upgrade avionics in the cabin/cockpit. Because the hospitality industry was his true passion, he brought his expertise to El Dorado Cantina in April 2021 at El Dorado Cantina, joining the team which will open El Dorado Cantina locations around the world.

Karen Carlough

Karen Carlough has been in the hospitality industry for over 16 years, leading the sales and event teams at Vegas’ leading entertainment venues and groups including Light Group, Hakkasan Group, and Topgolf. As an industry leader in the events space, she oversaw the management of large-scale events such as the Michael Jordan Invitational After Party, the Derek Jeter Invitational After Party, the Tiger Wood vs Phil Mickelson Opening Reception, the iHeartRadio After Party, and the Jordan Spieth Under Armour Reveal Event.
